White Chocolate Cranberry Madeleines

A combination of white chocolate and cranberry in a classic French Madeleine, it’s an exquisite treat that’s perfect for tea parties, dessert or just a yummy snack.

What is a madeleine? 

A Madeleine is a type of small French cake, known for their distinctive signature shell shape. They are typically baked in pans that have shell-shaped depressions, which give the cakes their distinctive shape. The little French cakes are made with butter, sugar, eggs, and a small amount of flour. They are often flavored with vanilla or citrus zest, and may also include almonds or other nuts. For me, the perfect madeleines have crispy edges and a nice moist- cake like texture on the inside. 

Where can you find the special pan?

I haven’t personally seen this in a store before. Some specialty stores may carry them. You can purchase online from multiple retailers. Some pans are silicone molds while others are metal. If using silicone molds, I use baking trays under them.

Other Equipment I find handy while making Madeleines?

  • A wire rack for cooling your baked goods.
  • A piping bag can be handy for getting the madeleine batter into the pan. 
  • You can use a mixer for the batter.

Ingredients needed to make this cranberry white chocolate madeleine recipe.

  • Eggs
  • Sugar
  • Salt
  • All-purpose Flour
  • Melted Butter
  • Almond Extract
  • Vanilla Extract
  • Dried Cranberries
  • White Chocolate Chips
  • You’ll need some cooking spray to ensure the baked madeleines don’t stick to the madeleines pan. You can also use a pastry brush to make a buttered pan.

Favorite Variations

  • You can swap the white chocolate for dark chocolate chips. 
  • Additionally, you could leave out the cranberry entirely and use a combination of various chocolate chips for chocolate lovers. 
  • Once the madeleines have cooled to room temperature, you can dip them in white melted chocolate. 
  • Leave out the white chocolate, cranberries, and almond extract for a traditional madeleine recipe. 
  • Upon removing from oven and placing on cooling rack, you can dust the little cakes with powdered sugar.

Why I love Almond Extract? (If you don’t have a nut allergy)

Almond extract is one of those distinct flavors. It is really common to use in wedding cakes. Almond extract has a strong, sweet, and slightly fruity flavor. It is often described as having a marzipan-like flavor or a cherry like flavor. (Try adding it to cherry pie!) 

Store leftovers of the madeleine cookies/ cakes in an airtight container for 2-3 days.

White Chocolate Cranberry Madeleines

Ingredients
  

  • 3 Eggs
  • c Sugar
  • ¼ tsp Salt
  • 1 c Flour
  • ½ c Butter melted
  • ½ tsp Almond Extract
  • 1 tsp Vanilla
  • ¼ c Dried Cranberries
  • ½ c White Chocolate Chips

Instructions
 

  • Preheat oven to 375°.
  • Cream together eggs and sugar.
  • Mix in flour and salt.
  • Mix in vanilla and almond extracts.
  • Fold in the cranberries and chocolate chips.
  • Add batter to madeleine pan.
  • Bake 15 minutes or until golden.
