Chicken Salad Puff Pastry Cups

When I need easy appetizers with minimal effort, I love puff pastry appetizer cups. These chicken salad puff pastries are a personal favorite. While I serve these for special occasions, I also make them as a main course for lunch or dinner.

What ingredients are needed to make chicken salad puff pastry cups?

  • Puff Pastry (2 count box) (I use store-bought puff pastry, but you can make your own)
  • Shredded Chicken
  • Slivered Almonds
  • Mayo
  • Green Onions
  • Dried Cranberries
  • Dried Dill
  • Salt & Black Pepper to Taste

How to make the puff pastry cups.

  1. Cut pastry into 12 squares. (You can use a knife or pizza cutter, I typically do this on a lightly floured surface).
  2. Pierce tiny holes using a fork.
  3. Spray muffin tin and press a square into each well of the muffin pan. (You can use a cooking spray or olive oil, avocado oil, or vegetable oil).
  4. Bake 13-15 minutes or golden brown.
  5. Remove from oven and using a spoon, press down in center to form a well.

Other things you can use these pastry cups for?

  1. Savory spinach and feta cheese (or other savory fillings)
  2. Mini Apple Pies
  3. Lemon Curd and other citrus curds
  4. Mini Chicken Pot Pies
  5. Baby Spinach and Artichoke
  6. Goat Cheese and Honey

Other ways to serve this chicken salad?

  1. On a bed of lettuce
  2. With Crackers
  3. In pre-baked tartlet shells
  4. In Mini Red Peppers

*I leave the almonds out of the chicken salad if I am having a party and am not aware of all the food allergies of my guests.

Ingredients
  

  • Puff Pastry 2 count box
  • 2 c Shredded Chicken

  • Combine all chicken salad ingredients.
  • Place a scoop of chicken salad into each puff pastry cup. Serve!
