Southern Egg Salad Recipe

This Southern Egg Salad recipe is an easy and delicious way to make a classic sandwich with a Southern twist. This simple yet flavorful dish is sure to delight the tastes of your family and friends! 

It reminds me of a deviled egg or a potato salad without the potatoes. It has been served in my family for generations and really is one of my comfort foods.  

Simple Ingredients

To make this egg salad sandwich, you will need the following simple ingredients: hard-boiled eggs, mayonnaise, onion, sweet pickle relish, yellow mustard, and salt and pepper to taste. To customize the egg salad, you can add a few slices of bacon, green onion, herbs or spices to your liking. I love to add a sprinkle of paprika on top. 

The Easy Process

On thing I have started doing is using my instant pot to make the perfect hard boiled eggs. This is now my new favorite way to make the eggs and save a little bit of effort.  With minimal preparation time and effort, you can enjoy this delicious meal that is sure to please! Whether it’s for lunch or dinner, this Southern-style egg salad sandwich is sure to hit the spot.

To start, chop the hard-boiled eggs into small pieces and place them in a large bowl, add the onion. In a separate bowl, whisk together mayonnaise, sweet pickle relish, mustard, salt and black pepper until combined. Pour the mixture over the chopped eggs and mix gently until everything is coated evenly. This makes for a chunky egg salad; however, you can mash the eggs for a creamier texture. 

Variations

The key to a good Southern-style egg salad sandwich is the addition of sweet pickle relish, which gives it a unique flavor. However, if you aren’t a fan, you can also use dill relish. I also sometimes use miracle whip in place of the mayo for tangier flavor. You can also sub Dijon mustard for the yellow for a bit of a kick. 

To assemble your sandwich, spread some of the egg salad onto two slices of your favorite bread and top with additional condiments such as lettuce, tomatoes or pickles if desired.  

Additional ways to serve this easy recipe: 

  1. On a bed of lettuce with crackers.
  2. As a lettuce wrap.
  3. Using buttery croissants.
  4. As a filling for mini sweet peppers.

  • Chopped sweet pickles rather than the sweet relish.

Southern Egg Salad

Ingredients
  

  • 5 Eggs hard boiled (I use the Instant Pot for this)
  • ¼ C Yellow Onion finely diced
  • ¼ C Mayo
  • 1 tsp Yellow Mustard
  • 1 ½ tbsp Sweet Pickle Relish
  • Salt & Pepper to Taste

Instructions
 

  • Mash the eggs. Add in all ingredients and mix well.
