It’s almost Thanksgiving! I have made Chicken and Cornbread Dressing many times in the last few months to satisfy cravings. I am starting to think perhaps this baby believes Thanksgiving happens once a month. But hey there are worse things to believe.

But now it’s time to figure out what is on the menu for actual Thanksgiving. Maybe it is because I am pregnant and want all the food, but the menu keeps growing.

I was starting to feel overwhelmed with preparations, until I realized, ” Hey, you have 2 Instant Pots this year, put them to work!” So I have started converting recipes that use to take up precious oven space to be Instant Pot friendly.

First, up to be converted to the Instant Pot is the family favorite, Cheesy Broccoli & Rice Casserole.

I made this recipe even easier by using a bag of steamable broccoli that you just microwave. OH and guess what? It is only 5 ingredients, excluding the spices you probably already have on hand. Now that this is Instant Pot friendly, I imagine I’ll be adding this to our regular dinner menu more often.

It would be super easy to throw in a can of tuna or a rotisserie chicken into the broccoli and rice at the end once everything is cooked and have this serve as a main dish.

Instant Pot Cheesy Broccoli & Rice

Servings 6

Ingredients
  

  • 1 Cup White Rice
  • 1 ¼ Cup Chicken Broth
  • 12 Oz Broccoli Frozen, Steamable Bag
  • 10.5 Oz Cream of Mushroom Soup
  • 1 Cup Cheese of Choice Shredded, I use cheddar
  • Salt, pepper, and other seasonings of choice see notes

Instructions
 

  • Add Chicken Broth to the Instant Pot inner pot.
  • Add the white rice and stir.
  • Secure the lid and move the pressure valve to the sealing position. Press the manual cook button and adjust time to 4 minutes.
  • While the rice is cooking, it will take a around 10 minutes to come to pressure), cook broccoli in microwave according to package instructions.
  • Once the rice as finished cooking, let the pressure naturally release for about 10 minutes.
  • Turn off Instant Pot. Stir in broccoli, soup, cheese, and seasonings to taste. Replace lid, but don't seal, and let sit 5 minutes.
  • Remove lid, stir, ensure the cheese has melted, and enjoy.

Notes

I like to use salt, pepper, onion powder, and garlic powder for my seasonings. However, you can omit any of these and choose seasonings that your family enjoys.
