Bacon Roasted Red Pepper Quiche

I am a huge fan of brunch. It could be my general dislike of breakfast. When I first wake up, I want to drink my coffee and not talk to anyone, not look at anyone. This is not my personality! I generally like to talk. Like a lot. So my waking up process is generally me and a giant cup of coffee. Most likely followed by an equally giant cup of tea. ( Yeah I have a problem with caffeine, I am fully aware, thanks). SO since I drink a liquid breakfast that is not filling in the least, I NEED an early lunch and brunch is generally the answer. This Bacon and Roasted Red Pepper Quiche is my go-to.

Cheddar makes my heart happy.

The bacon and roasted red peppers are combined with my most favorite cheese, Cheddar. I am a cheddar gal through and through. However, you can sub it out and try a different combo. I just think a medium cheddar (I’m biased) blends so nicely with the salty bacon and the sweet, charred flavor of jarred roasted red peppers.

Jarred Roasted Red Peppers?

Yep, the little sweeties come straight from a jar to my cutting board and then into the quiche. If I am using roasted peppers in a sauce or in a casserole or quiche, I tend to just get them from a jar rather than roast them myself. They have a great flavor. I tend to find these on the same isle in the grocery store as the pickles.

Ain’t no party like a quiche brunch party

I like to serve this Bacon and Roasted Red Pepper Quiche with a side of fruit. With the bacon, peppers, and cheese, this quiche really shines on it’s own without an extra dish. (That’s pretty talk for it sits heavy and I am happy just to eat it and fruit).

Bacon and Roasted Red Pepper Quiche

Brunch for me is not complete without quiche. This quiche features bacon and sweet roasted red peppers for a combination that is perfect for breakfast or brunch.

Ingredients
  

  • 5 large Eggs
  • 4 Oz Medium Cheddar Shredded
  • 1/2 Cup Roasted Red Peppers Chopped, (I use jarred)
  • 6 Strips Bacon Cooked & Crumbled
  • 1 Cup Half & half
  • Salt & Pepper to taste
  • 1 Frozen pie crust or your favorite pie dough If using frozen, thaw according to package directions.

Instructions
 

  • Preheat Oven to 350°
  • Beat the eggs for about 30 seconds to break the yolks and combine them with the whites.
  • Add in your half& half and gently mix.
  • Fold in the cheddar, roasted red peppers, and crumbled bacon.
  • Salt & pepper to taste or add in another seasoning that you prefer.
  • Pour mixture into pie crust.
  • Bake in preheated oven for 45 minutes or until center is set.

Notes

*While the quiche is baking, pay extra attention to pay crust edges. If you notice them getting too dark for your liking, cover the edges with foil or pie crust protectors.
