These Key Lime Muddy Buddies are Summer. Summer is always a fun season. I love being able to enjoy the outdoors. I love going to Barbecues. Most of all, I love Summertime produce. I have a great appreciation for all citrus fruits, but there is just something about limes that speaks to my heart. Maybe because they pair so well with everything from tacos to pie? What’s not to love?
These Key Lime Muddy Buddies came about in a fairly unique way.
Let’s be honest the majority of my recipes come about in pretty unique ways. My mind is a fairly creative place when it comes to food.
I watch Christmas movies all year, (and Halloween movies as well but that’s different story.) So I was having a Christmas movie marathon with my cat, Sammy, and thinking of all the different yummy treats we make about that time of year. One particular recipe is always a family favorite, Muddy Buddies. I believe in some families, this is also a recipe known as Reindeer Chow.
Digging through my apartment pantry cabinets (it is a lot of digging, those boys go way way back and my arms are only so long. It is an adventure really.) I found all the ingredients for muddy buddies, BUT I also found a little bottle of Key Lime juice sitting all by it’s lonesome, just waiting to be used and thought KEY LIME MUDDY BUDDIES. The excitement is real to be able to share these with my family once quarantine has passed.
Traditional Muddy Buddy recipes use Peanut Butter, however this Key Lime variation is completely peanut butter free.
Key Lime Muddy Buddies
Ingredients
- 12 OZ Box Corn Squares Cereal
- 1½ Cups White Chocolate Chips
- 4 TBSP Butter
- 4 TBSP Key Lime Juice I used bottled
- 2½ Cups Powdered Sugar
Instructions
- Place Cereal in a container that has a lid or in a bowl large enough to mix ingredients together in.
- Melt white chocolate chips and butter together in a microwave safe bowl. I did 15 second intervals to allow me to stir and ensure the chocolate wasn't burning.
- Mix key lime juice into the butter and chocolate mixture. (Add more or less lime juice based on personal preference).
- Drizzle the chocolate lime mixture over the cereal, stirring to coat all the pieces on both sides.
- Add powdered sugar a little at a time. Stirring to coat the cereal. (I place the lid on my container and give it a few shakes). Continue this process until you are out of sugar and have coated all the pieces.
- If not eating immediately, store in fridge. The snack mix is best prior to storage in fridge as texture will be affected slightly.
